CHICKEN PARMESAN 
1 egg
2 lbs. chicken parts
1/2 c. Italian bread crumbs
2 tbsp. shortening
1 can tomato soup
1/4 c. water
1/4 c. chopped onion
1/2 tsp. garlic powder
1/2 tsp. basil
1/2 tsp. oregano
1/2 lb. Mozzarella cheese

Put shortening in non-stick fry pan. Dip chicken parts into beaten egg, then into crumbs and fry in oil until brown. Drain off any leftover oil. Add soup, water, onion, and seasonings; simmer 45 minutes, adding small amounts of water if necessary to keep from sticking. Put cheese slices on top. 2 cans of soup may be used if desired; also more spices may be added.
