HONEY MUFFINS 
2 c. unsifted all-purpose flour
1 tsp. salt
3 tsp. baking powder
1 c. milk
1/4 c. honey
1 egg, beaten
1/4 c. melted shortening or vegetable oil

Sift flour, salt, and baking powder. Mix milk, honey, egg, and shortening. Add to first mixture and stir only enough to dampen ingredients.

Fill greased medium muffin pans half full. Bake in hot oven (400 degrees) for 25 minutes or until lightly browned. Yield: 12 muffins.

OPTIONAL: Peanut Butter Muffins

Prepare Honey Muffins, substituting 1/2 peanut butter for shortening. Mix peanut butter with honey (before adding to milk and egg mixture).
