FRENCH FRIED CHEESE CUBES 
1 c. dry bread crumbs
2 tsp. Italian seasoning (optional)
10 oz. assorted firm cheese (cut into 3/4" cubes)
2 eggs, beaten

In small bowl, combine bread crumbs and Italian seasoning. Using a toothpick, dip each cheese cube in egg, then in crumbs. Dip in egg and crumbs again, making sure cheese is completely covered. Cover, refrigerate 1-2 hours. At serving time, heat 2-3 inches of oil and fry 30-60 seconds or until golden brown. Yields 36.
