PEACH-BLUEBERRY COBBLER 
1/3 c. sugar
1 tbsp. cornstarch
3/4 c. orange juice
1 1/2 c. fresh or frozen peach slices
1 c. fresh or frozen blueberries
1/2 c. all-purpose flour
1/2 c. whole wheat flour
1 1/2 tsp. baking powder
1/3 c. skim milk
3 tbsp. cooking oil
1 tsp. sugar

Stir together sugar and cornstarch in a small saucepan. Add orange juice. Cook and stir until thick and bubbly. Add peaches and blueberries, cook until hot. Keep hot.

Combine all-purpose flour and whole wheat flour, baking powder in a medium bowl. Add milk and oil. Stir with a fork until mixture forms a ball. On a floured surface, pat dough into an 8-inch circle. Cut into 8 wedges.

Spoon fruit mixture into a 9 x 1 1/2 inch round baking dish. Immediately place wedges on top of hot fruit mixture. Sprinkle with 1 teaspoon of sugar. Bake in a 425 degree oven for 25-30 minutes or until brown. Serve warm.
