BAKED ONIONS (EA) 
Onions (2-3 per person)
1 tbsp. brown sugar
1/2 tsp. salt
1/4 tsp. baking soda

Parboil onions in water to cover, with the above ingredients for 1 minute. Drain and boil until tender, not soft, in clear boiling water. Drain well. Arrange in casserole with 2 cans tomato sauce, liberal pieces of butter, salt and pepper to taste. Bake in slow oven, 300 degrees for 2 hours, covered. Remove cover. Sprinkle with grated sharp cheese. Brown in oven.
