8 eggs
1/2 c. flour
1 tsp. baking powder
3/4 tsp. salt
4 c. shredded Monterey Jack cheese, 1 lb.
1 1/2 cottage cheese
1/4 c. jalapeno peppers

Beat eggs 3 minutes. Combine flour, baking powder, and salt. Add to eggs and mix well. Stir in cheese and peppers. Pour into greased 13 x 9 x 2 baking pan; bake at 350 degrees for 30-35 minutes. Let cool 10 minutes; cut into squares. Makes about 12 servings.
