2-3 oz. ham or vegetables 1 c. milk 2 eggs, well beaten 8 oz. Swiss cheese or muenster, diced (prefer Swiss) 3/4 c. flour 3/4 tsp. oregano 1/2 tsp. salt Dash pepper Beat everything together except cheese. Add diced cheese. Anything can be added to this quiche recipe: ham, bacon, broccoli, spinach, tomatoes, pepper, onion, mushrooms, etc. I've found 3 ounces to be sufficient amount as you want the quiche somewhat moist. It will come from oven deep golden brown and high. As it cools it will flatten. Pour into a buttered pie plate 8 or 9 inches. Because of the flour the quiche makes its own crust. I usually make 2; one vegetable and the other ham and cheese. Bake 30-35 minutes at 425 degrees, can be mixed ahead. Also, can be frozen after cooking and reheated in oven or microwave. This is a delicious quiche and inexpensive. Travels well. People think you're a genius with this one. I think the secret is the oregano. Enjoy! Serves 6-4 very hungry people. |
