FLAN 
5 whole eggs
3 yolks
2 cans evaporated milk (10 oz.)
3/4 c. sugar
1 tsp. vanilla
1 c. sugar (to caramelize)

Beat the eggs together (do not overbeat); pour in milk, sugar and vanilla and mix with spoon. Pour 1 cup of sugar into pan over medium fire and melt it, shaking pan as it melts to coat sides. Pour above mixture on top of caramelized sugar. Then place the pan (mold) into another pan that has about 1 1/2 inches of water in it. Cook for 1hour at 350 degrees. Test for readiness by sticking a sharp knife into center - if clean, flan is done - it will continue to set when removed from oven.
