MISS MADA'S BUTTERSCOTCH PIE 
2 c. brown sugar
2 tbsp. flour
Pinch of salt
4 eggs, separated
1/2 c. butter, melted
1 tsp. vanilla
3 c. whole milk

Mix brown sugar, flour, and salt. Add milk gradually; mix until smooth. Beat egg yolks and add to mixture. Cook in double boiler until thick. Add butter and vanilla; mix well. Pour into 2 baked pie crusts. Beat egg whites until foamy. Gradually beat in 8 tablespoons sugar and continue beating until meringue stands in peaks. Cover the pie with meringue spread to edges. Bake in moderate oven until meringue is golden.

Aunt Mada Gibbs lived on Main Street in Madison where she owned and operated the Seminole Lunch Room. She served regular boarders and people traveling through Madison. All her meals were cooked on her kerosene range and oven. Fried Smothered Steak and Gravy was another specialty.
