MOM'S CHEESE PIMIENTO SPREAD 
1 lb. Longhorn cheddar cheese
1 lb. Monterey Jack cheese
1/2-1 lb. sharp cheddar cheese
1 lg. onion
1 bell pepper
1 jar pimiento
Mayonnaise or Miracle Whip to taste

Grate cheeses, onion and green pepper. Drain and add pimiento. Mix together well. Add mayonnaise if desired. Best when allowed to set overnight in refrigerator. Use in sandwiches, to stuff celery as a relish, as a spread for crackers or melted on toast or vegetables.
