CREAMY PIMIENTO CHEESE SPREAD 
2 1/2 c. (10 oz.) shredded sharp cheddar cheese
1 (12 oz.) container cottage cheese
1/4 c. mayonnaise or salad dressing
1/8 tsp white pepper
4 drops hot sauce
1 (4 oz.) jar diced pimiento, undrained

Put the knife blade in food processor bowl; add first 5 ingredients. Process until smooth. Add pimientos; pulse 4 or 5 times. Yield: 3 1/2 cups. Keep refrigerated.
