CHICKEN FLORENTINE 
1 lb. fresh spinach, rinsed and stems removed
1 sm. onion, finely chopped
1/4 c. grated Parmesan cheese
Salt and pepper
8 boneless chicken breast halves
4 slices baked ham, cut in half
4 slices Swiss cheese, cut in half
2 tbsp. butter
Garlic salt
Thyme leaves
Paprika

Preheat oven to 450 degrees. Tear off 4 x 18 sheets of heavy duty aluminum foil. Coarsely chop spinach; place in center of lower half of each sheet of foil. Sprinkle spinach with onion and Parmesan cheese. Season with salt and pepper. If necessary, pound chicken breast to 1/2-inch thickness for even cooking. Top four chicken pieces with slices of ham, cheese, and a second piece of chicken.

Place chicken bundle on top of spinach on each foil sheet. Dot chicken with butter; sprinkle with garlic salt, thyme, and paprika. Wrap chicken and spinach bundle tightly with foil. Bake in 450 degree oven for 22 minutes.

Transfer foil packet to dinner plate using oven mitten. Cut an "X" in top of packet; fold back. Serves 4.
