STRING BEAN & SNOW PEA SALAD
VINAIGRETTE
 
1 1/2 lbs. string beans (steamed until tender)
3/4 lbs. snow peas
1/2 lb. mushrooms, sliced
6 tbsp. vinegar
4 tbsp. dijon mustard
1 c. plus 2 tbsp. oil
1 tsp. salt
Pepper to taste
2 tbsp. chopped shallots

Place string beans, snow peas, and mushrooms in large bowl. Add dressing. Allow to stand in refrigerator for 2 hours or more before serving.
