SWEET AND SOUR SPICED RED
CABBAGE
 
2 tbsp. shortening
1 med. red cabbage, shredded
3 tart apples, peeled and sliced thinly
Salt to taste
1/2 tsp. pepper
4 cloves
1/2 tsp. allspice
1/2 c. sugar
1/2 c. vinegar

Melt shortening in a Dutch oven or heavy saucepan. Saute cabbage and apples over low heat for 3 minutes. Sprinkle with salt, pepper, cloves, allspice and sugar. Cover and simmer for 1 hour. Add vinegar, simmer for 1 hour longer.
