SAUSAGE CAKE 
1 lb. unseasoned sausage
1 1/2 c. brown sugar
1 1/2 c. white sugar
2 eggs
1 c. cooked raisins
1 c. pecans
1 tsp. cinnamon
1 tsp. allspice
1 tsp. cloves
5 c. sifted flour
3 tsp. baking powder
1 c. warm coffee
1 tsp. baking soda, dissolved in coffee
Pinch salt

Mix with your hands, bake in layers at 300 degrees for 1 1/2 to 1 3/4 hours or in sheet pan at 275 degrees for 45 minutes.

CARAMEL ICING:

3/4 c. butter
1 1/4 c. light brown sugar
1/2 tsp. salt
6 tbsp. milk
3 3/4 c. powdered sugar
1 tsp. vanilla

Boil butter, sugar and salt 2 minutes over low heat, stirring constantly. Remove from heat and cool slightly. Add powdered sugar. Beat until thick enough to spread. Add vanilla.
