1 1/2 c. oil
2 c. sugar
3 eggs
3 tbsp. vanilla
1 c. coconut
1 c. chocolate chips
1 c. raisins
1 c. chopped nuts
3 c. chopped apples or 1 qt. applesauce
3 c. flour
1 tsp. baking soda
1 tsp. salt

Beat together oil, sugar, eggs and vanilla. Add mixture of coconut, chips, raisins, nuts and apples; mix well. Add flour, soda and salt mixture. Stir 200 strokes by hand. Bake in a 9 x 13 inch pan at 325 degrees for 45 minutes. No frosting needed.
