CHIP-APPLE SNACKIN' CAKE 
2 eggs
1/2 c. vegetable oil
1/4 c. apple juice
1 tsp. vanilla
1 3/4 c. unsifted all-purpose flour
1 c. sugar
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1 1/2 c. diced peeled tart apples
3/4 c. semi-sweet chocolate miniature chips
1/2 c. chopped nuts
Confectioners' sugar or whipped topping (optional)

Beat eggs slightly in large mixing bowl; add oil, apple juice and vanilla.

Combine flour, sugar, baking soda, salt and cinnamon; add to egg mixture, blending well. Stir in apples, miniature chips and nuts.

Pour into greased and floured 9-inch square pan. Bake at 350 degrees for 40 to 45 minutes or until cake begins to pull away from edges of pan. Cool in pan.

Just before serving, sprinkle top with confectioners' sugar or serve with dollop of whipped topping sprinkled with cinnamon. Makes 8 to 10 servings.
