MIKE'S COLE SLAW | |
2 lb. head green cabbage 2 carrots 1 green pepper 3 tbsp. vinegar 1/3 c. sugar 1 1/2 c. Miracle Whip The night before, wash and quarter cabbage, then shred it. A knife will do unless you want it very finely shredded. Shred the carrot with a vegetable parer or potato peeler. Mince the green pepper. Combine carrots and green pepper with cabbage. Mix vinegar, sugar and Miracle Whip, stirring vigorously (or use blender). Put half of cabbage mixture into 2 quart casserole or bowl, pour half of dressing over it. Add remaining cabbage and dressing. The dressing is adequate for the cabbage, it will drip down through the cabbage and as it soaks, the cabbage will soften and lose about 1/3 of its volume by yielding its moisture to the dressing. Cover bowl and refrigerate. Before you go to sleep, and again in the morning, stir the mixture with a spoon and press it down with the back of the spoon. Serves 6. Warren has multiplied this recipe by 7 to serve 42. |
