TWICE BAKED POTATOES | |
4 lg. baking potatoes 1 (8 oz.) sour cream 1 stick butter 1 sm. onion, chopped 4 oz. sharp Cheddar cheese, shredded Wash and prick the skins of the potatoes with a fork. Bake unwrapped in 350 degree oven 1 1/2-2 hours until tender. Let cool 15 minutes. Cut potatoes in half lengthwise and dip out insides into a bowl. Add sour cream, butter and chopped onion. Stir until well blended. Spoon mixture back into potato halves and put on a large baking sheet. Sprinkle shredded cheese over top and bake at 350 degrees for 30 minutes. Makes 8 servings. |
