RED VELVET CAKE 
2 scant c. plain flour, sifted
2 c. sugar
4 eggs
1 c. self-rising flour, sifted
1 c. Crisco
1 c. milk
2 oz. red food coloring

Blend Crisco and sugar; add eggs, one at a time, beating continually. Add flour and milk gradually, then coloring. Add flavor, if desired. Bake in 4 layers.

ICING:

1 box confectioners' sugar
2 tsp. vanilla
3/4 c. Crisco
1/2 c. milk
1 tsp. salt

Beat on medium speed for 3 minutes, then on high speed for 5 minutes. Spread on cooled layers, cover top and sides.
