RED VELVET CAKE 
1/4 lb. butter
1 1/2 c. sugar
2 eggs
2 tbsp. cocoa, level
1 to 2 oz. red food coloring
2 c. flour
1 c. buttermilk
1 tsp. salt
1 tsp. vanilla
1 1/2 tsp. baking soda
1 tsp. vinegar

Cream butter, sugar and eggs. Make paste of cocoa and food coloring. Add paste alternately with flour to creamed mixture, mixing well after each addition. Add buttermilk, salt and vanilla; mix well.

Mix soda and vinegar together and add last, folding it in. DO NOT BEAT after adding vinegar and soda.

Bake in 2 round greased and lightly floured cake pans for 30 minutes at 350 degrees. When cool, frost with whipped cream frosting.
