SPICED APPLE PANCAKES 
Add 1/2 teaspoons or more of cinnamon and 3/4 cup grated apple to pancake batter.

CIDER SAUCE:

1 c. sugar
2 tbsp. cornstarch
1/2 tsp. pumpkin pie spice
2 c. cider
2 tbsp. lemon juice
1/4 c. butter (add last)

Cook and stir sauce until thick and boils. Boil 1 minute. Stir then add butter and serve hot over cooked pancakes. Add a dollop of whipped cream on top.
