HAWAIIAN CARROT CAKE | |
1 1/2 c. salad oil 2 c. white sugar 4 eggs 2 tbsp. vanilla 2 tsp. cinnamon 2 tsp. nutmeg 2 tsp. allspice 1 tsp. salt 1 c. macadamia nuts 1 c. golden raisins 1 c. flake coconut 4 c. grated fresh carrots 3 c. sifted measured cake flour Blend salad oil and white sugar. Beat eggs into oil/sugar mixture one at a time. Combine remaining ingredients (except flour) and add to egg/oil mixture. Fold sifted flour into remaining mixture. Pour all into 9x13 cake pan. Bake at 350 degrees for 45-50 minutes (until toothpick comes clean). Cool. Frost with Cream Cheese Frosting. CREAM CHEESE FROSTING: 1/2 c. sweet butter, softened 1 (8 oz.) pkg. cream cheese, softened 1 lb. powdered sugar Blend all together until smooth. |
