LAZY DAISY OATMEAL CAKE 
1 1/4 c. boiling water
1 c. Quaker Oats, uncooked
1/2 c. cooking oil
1 c. firmly packed brown sugar
1 tsp. vanilla
2 eggs
1 1/2 c. sifted all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
3/4 tsp. cinnamon
1/4 tsp. nutmeg

Pour boiling water over oatmeal and let set 20 minutes. Mix oil and sugar until creamy. Add eggs and vanilla. Beat again. Add oatmeal mixture and mix well. Measure flour, spices, soda and salt together and sift again. Add this to mixture and pour batter into well greased floured pan. Bake in preheated oven 350 degrees and bake 30 to 35 minutes. Do not remove cake from pan.

FILLING OR FROSTING:

1/2 c. butter or 1 stick of butter
1 c. firmly packed brown sugar
6 tbsp. can milk
1 c. chopped pecans
3/4 c. shredded coconut

Combine all ingredients and let boil for about 2 minutes. Spread evenly over cake.
