PINEAPPLE CHEESECAKE 
2 pkg. unflavored gelatin
1/2 c. water
2 c. crushed pineapple & its juice (1 can)
1 1/3 c. instant nonfat dry milk
4 tsp. vanilla
8 tsp. sugar, equivalent artificial sweetener
3 tsp. lemon juice
1 tsp. butter flavoring
Cinnamon to taste

Dissolve gelatin in 1/4 cup water over low heat. Put into blender. Add rest of ingredients. Blend well. Pour into 8 inch pie pan. Sprinkle cinnamon on top. Refrigerate until sets. Fat free - sugar free. 1/4 pie = 1 cup milk and 1 piece fruit.
