EVER-SO-EASY-FRUITCAKE 
2 1/2 c. unsifted flour
1 tsp. baking soda
2 eggs, slightly beaten
1 (28 oz.) None Such Ready to use Mincemeat with Brandy and Rum
1 (14 oz.) condensed milk (I used 1/4 can less)
2 c. candied fruit (I used 1/2 c. dates, chopped)
1 c. chopped nuts

Preheat oven to 300 degrees. Stir together flour and baking soda, set aside. In large bowl, combine remaining ingredients, blend in dry ingredients. Turn batter into well greased, floured 10 inch tube pan. Bake 1 hour and 45 minutes or until wooden toothpick inserted near center comes out clean. Cool 15 minutes. Turn out of pan. Glaze if desired.

Makes 4 dozen fruitcake bars. Bake at 45-50 minutes in a 15 x 10 inch jelly roll pan. Note: Made tube cake and small glass square dish. Excellent!

I love fruitcake & have made this several times... TIP: Can be made in fruitcake bars. Put in 15x10 jelly roll pan. Bake for 45 minutes. Cut in squares and serve.
