EASY FRUITCAKE | |
2 1/2 cups all-purpose flour 1 tsp. baking soda 2 eggs, slightly beaten 1 (28 oz.) jar ready to use mincemeat 1 (14 oz.) can Eagle Brand sweetened condensed milk 1 lb. candied fruit (about 2 cups) 1 cup coarsely chopped nuts Preheat oven to 300°F. Grease 2 (9x5-inch) loaf pans. Combine flour and baking soda; set aside. In large bowl, combine remaining ingredients. Blend in dry ingredients. Pour half the batter into each pan. Bake at 300°F for 1 hour and 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes. Turn out of pan. Glaze and garnish as desired. Makes 2 fruitcakes.
