FARMER'S BREAKFAST 
1/3 c. chopped onions
1/4 c. chopped green peppers
2 tbsp. oil
2 c. cooked ham, cut in thin strips
1 (9 oz.) pkg. frozen French fries, partially thawed and chopped
4 eggs, beaten
2 tbsp. water
1/4 tsp. salt
Dash of pepper

Cook onion and green pepper in oil until tender-crisp. Add ham and potatoes; cook until potatoes are tender. Combine eggs, water, salt and pepper and pour over ham mixture. Cook over low heat, turning occasionally, until eggs are set. Serves 4.
