HONEY OATMEAL MUFFINS 
1 c. rolled oats
1 c. buttermilk
1 c. flour
1 c. honey or 1/2 c. brown sugar
1/3 c. butter, melted
1 tsp. salt
1 tsp. baking powder
1/2 tsp. baking soda
1 egg

Combine oatmeal and buttermilk, allow to stand 1 hour. Sift flour, salt, baking powder and baking soda together in a bowl. Add egg and honey to oatmeal mixture, beating well. Stir in dry ingredients and butter, mixing just until moistened.

Fill greased muffin tins 2/3 full. Bake 20 minutes or until done and lightly browned. Makes 12 muffins.
