POPOVER PANCAKES 
1 tbsp. vegetable oil
4 lg. eggs
2/3 c. flour
1 1/2 tbsp. cold butter, cut in pieces
2/3 c. milk

Heat oven to 450 degrees. Pour oil into 9 inch pie pan. Heat in oven 5 minutes. Meanwhile, put eggs, flour, milk and butter in blender and process until well blended, scraping sides down.

Pour batter into hot pan and bake 20 minutes without opening the oven door until pancake has puffed up high around the edges. Reduce oven temperature to 350 degrees and bake 20 minutes longer until sides are crisp.

Dust pancake with powdered sugar. May be served with pancake syrup on sauteed apples.

SAUTEED APPLES:

Melt 1 tablespoon butter in large skillet. Add 1 1/2 pounds sliced apples, 1/4 cup sugar, and 1/2 teaspoon cinnamon. Stir over medium high heat until apples look translucent.
