YVONNE'S CARROT CAKE 
1 1/2 c veg. oil
1 3/4 c sugar
3 eggs
2 c flour
2 tsp baking soda
1/2 tsp salt
3 tsp cinnamon
2 c grated carrots
1 c nuts
8 oz. can crushed pineapple (drain)

Frosting:

1 pkg cream cheese
1/2 stick soft butter
1 tsp vanilla
1 lb. confectioners sugar

Mix oil, sugar, and eggs together. Add dry ingredients and mix well. Add carrots, nuts, and pineapple. Mix well and bake at 350°F for 1 hour.

Let cool and frost.
