GRAMMA'S MOIST CARROT CAKE | |
3 1/2 c. flour 2 tsp. baking powder 2 tsp. baking soda 2 tsp. cinnamon 1 tsp. salt (optional) 2 c. sugar 1 1/2 c. cooking oil 4 c. grated carrots 4 eggs 1 c. chopped pineapple, drained 1 c. chopped nuts Sift flour, baking powder, salt, baking soda and cinnamon twice. Combine sugar and oil. Beat well. Then blend in carrots and drained pineapple. Beat eggs, one at a time. Add to carrot mixture, then add to the dry ingredients. Pour in ungreased pan (Bundt pan works well also). Bake 1 hour or slightly longer until done. |
