RICE SALAD 
3 c. cooked rice, cook & set aside
1/2 c. chopped celery
1 can sliced black olives
8 radishes, chopped
4 quartered tomatoes, chopped
1/4 c. chopped green onion
3 chopped eggs
2 avocados, chopped
1 sm. jar artichokes
1 green pepper, chopped
1 red pepper, chopped

DRESSING:

1/2 c. vegetable oil
Salt
Vinegar to taste
Splash of lemon juice
1 tsp. dry mustard

Mix all together. Toss and serve. Serves 6.
