OLD FASHION COLLARDS | |
1 Old Country ham hock 7 lbs. collards 2 tsp. salt 4 qts. water 1 tsp. sugar Boil ham hock until tender. Add collards (that have been washed and cut stalk off up to the leaf). Add salt and sugar. Bring to a boil and boil on medium heat for approximately 45 minutes or until tender. Dip collards out into colander to drain, chop with good chopper. Skim about 1/2 cup of grease for top of liquid and stir into chopped collards. |
