LIGHT GUMBO | |
1 lb. fresh or frozen okra, cut up 1 chopped onion 1 stalk celery, cut oblong 2 garlic cloves, crushed 1 tsp. thyme 1 lb. beef, chicken or fish 1 lb. white potatoes, cut in 1" cubes 3 carrots, diced 4 oz. cooking oil Saute okra, onion and celery in cooking oil. Add meat, 3 cups water and simmer 90 minutes. Add garlic and thyme, salt and pepper to taste. Add potatoes and carrots the last 15 minutes before serving. To thicken, mix 1 tablespoon cornstarch in 1 cup cold water and add to gumbo. |
