BRAN MUFFINS 
2/3 c. unsifted all-purpose flour
2 tbsp. sugar
2 1/2 tsp. calumet baking powder
1/4 tsp. salt
1 egg, beaten
3/4 c. milk
3 tbsp. shortening, melted
1 1/2 c. Post 40% Bran Flakes

Mix together flour, sugar, baking powder and salt. Combine egg and milk. Add to flour mixture. Then add shortening and mix only enough to moisten flour. Fold in cereal. Fill greased muffin pans 2/3 full. Bake at 425 degrees for 15- 20 minutes or until golden brown. Makes 8 medium muffins.
