TABULI 
1/2 c. bulgar
1 c. lettuce, chopped very small
3 c. parsley, chopped very small
1 stalk celery, very finely chopped
1 c. tomatoes, chopped small
3 mint leaves, smashed & finely chopped
1 c. olive oil
4 tbsp. lemon juice
2 cloves garlic, through press
Salt
Pepper

Soak bulgar for at least 4 hours in 1 quart water. Drain well in strainer. Toss together bulgar, lettuce, parsley, celery and tomatoes. Mix together, in separate small bowl, the dressing: olive oil, mint leaves, lemon juice and garlic. Add dressing to salad just before serving and toss well. Salt and pepper to taste.
