SAUCY ITALIAN ZUCCHINI 
3 med. zucchini, thinly sliced
1 tbsp. butter
1 tsp. salt
1/8 tsp. pepper
1/8 to 1/4 tsp. Italian seasoning
1 c. tomato sauce
1 c. shredded Mozzarella cheese or 1/4 c. grated Parmesan cheese

Preheat oven to 375 degrees. In 1 1/2 quart casserole, combine all ingredients except cheese. Sprinkle with cheese. Bake, uncovered, 30 to 40 minutes or until tender. For a tasty main dish, add 1 pound ground beef, browned. Layer with cheese and zucchini.
