SWISS STEAK WITH RICE 
8 - 10 oz. beef round steak
1 tbsp. flour
1/4 tsp. salt
Dash pepper
1 tbsp. oil
1/4 c. chopped onion
8 oz. can seasoned stewed tomatoes
1 c. beef broth
1 tsp. Worcestershire sauce
1/4 tsp. Italian seasoning
1/3 c. sliced carrot
1/3 c. sliced celery
1 sm. zucchini, cut in strips
1 c. hot cooked rice

Cut beef in half. Combine flour, salt, pepper and pound into steak. In medium skillet cook meat in oil until brown. Stir onion, tomatoes, broth, Worcestershire and seasoning into skillet. Cover and simmer over medium heat 40 to 60 minutes. Add carrots, celery; cover and cook 5 minutes. Add zucchini and cook 5 minutes or until meat and vegetables are tender. Serve over beds of fluffy rice. Serves 2.
