1 egg white
Pinch of salt
1 tsp. lemon juice
1 c. confectioners' sugar

Beat ingredients until light and fluffy and foam peaks. Add more confectioners' sugar, if needed, 1 tbsp. at a time. Store in air-tight container or cover with a damp cloth as it will dry quickly.
