CHEESE DUTCH APPLE CAKE | |
2 c. flour 1/2 c. sugar 1 tbsp. baking soda 1 tsp. salt 1/4 c. butter (1/2 stick) 1 1/2 c. shredded cheddar cheese 1 egg, beaten 3/4 c. milk 2 med. sized apples GLAZE: 3/4 c. sugar 1/2 tsp. cinnamon 1/3 c. water 1 tbsp. lemon juice 1/2 stick butter, or butter Sift together flour, sugar, baking powder, and salt. Cut in butter, add cheese and toss slightly until blended. Combine milk and eggs and add alternately to dry ingredients. Stir only until blended. Spread dough into an ungreased 9 1/2 x 9 1/2 x 2 inch baking dish. Peel and core the apples and cut into 1/4 inch slices. Press each slice diagonally into the dough about 3/4 inch apart. Bake in 375 degree oven for 35 minutes. Prepare glaze while dough is baking. Put all the glaze ingredients into a pan and bring to a rolling boil. Remove from heat and cool slightly. Pour over apple cake after it has baked for 35 minutes, loosening sides gently to allow the glaze to flow to the bottom. Return cake to oven and allow to bake for another 15-20 minutes or until golden brown. Best when made the day before serving. 15-18 servings. |
