EGGPLANT CASSEROLE | |
2 med. eggplants (peeled and chopped 3/4 inch) 1 med. green bell pepper (chopped) 1 med. onion (chopped) 3/4 cup water 1 1/2 tsp. salt 1 1/2 c. grated sharp cheddar cheese 1 c. broken saltine cracker crumbs 1/2 tsp. black pepper 6 tbsp. melted butter Put eggplant, pepper, onion, water and salt into saucepan. Cover and cook over medium heat until eggplant is clear, 5 to 7 minutes.. Drain. Butter 2 quart baking dish, layer vegetables, cheese, and crackers. Sprinkle with black pepper and drizzle with butter. Bake 350 degree oven 30 minutes until golden brown. |
