1 c. buttermilk 2 c. sugar Pinch salt 1 tsp. baking soda 3 c. pecan pieces, coarsely chopped 2 tbsp. butter In large kettle or dutch oven, combine first four ingredients. Over medium high heat, cook 5 to 6 minutes, stirring frequently. Add butter and pecans and continue to cook stirring constantly until soft ball forms in cold water (234 degrees). Remove from heat and cool two minutes. Beat until thick and creamy. Work quickly as you drop large tablespoons of the candy onto waxed paper or foil. This is a good dessert for Pork Fajitas. |
