ZUCCHINI ROUNDS 
1/3 c. biscuit mix of Bisquick
1/4 c. grated Parmesan cheese
1/8 tsp. pepper
2 slightly beaten eggs
2 c. shredded raw zucchini
2 tbsp. butter

In mixing bowl, stir together biscuit mix, cheese and pepper. Stir in beaten eggs, just until mixture is moistened. Fold in zucchini. In 10-inch skillet, melt butter over medium heat; use 1 tablespoon for each round. Fry until brown on each side, 4-5 minutes.
