POTATO PUFFS 
1/3 c. instant no-fat dry milk
1/3 c. water
2 c. mashed potatoes
1 med. onion, minced
1 egg, beaten
1 tsp. salt
1/8 tsp. cayenne
1 c. dried bread crumbs
1/2 c. grated Parmesan cheese
4 tbsp. melted butter

Beat the instant milk and water until thick and smooth. Add the potatoes, onions, egg, salt and cayenne. Form in small balls.

Mix together the bread crumbs, cheese and butter. Roll the potato balls in crumb mixture and place on a buttered baking sheet. Bake in a 350 degree oven for 1/2 hour or until golden brown. Serves 6.
