HERBIE'S BREAKFAST DISH 
9 eggs
11 slices of toast with crust cut off
3 c. milk
2 c. shredded cheddar cheese
2 lbs. ham, cut up

Add onion, browned slightly in a little butter, optional.

Whip eggs and milk, pepper (very little salt), 1 1/2 tablespoons dry mustard. Shred bread and put into mixture, add cut ham. Add all but 2/3 cup of cheese (keep remaining for top). Pour in 9 x 13 inch pan. Sprinkle remaining cheese over top. Cover with foil.

Place in refrigerator overnight. Take out 1 hour before baking. Bake in a 350 degree oven for 45 minutes. Let stand to set about 15 minutes and cut into squares. (Optional - You may add fresh mushrooms and green peppers, if desired.)
