APPLESAUCE CARROT CAKE 
1 1/2 c. brown sugar
1 1/2 c. applesauce
2/3 c. oil
4 eggs
3 c. flour
2 c. oatmeal
2/3 c. wheat germ
2 tsp. cinnamon
2 tsp. salt
2 tsp. baking powder
1 tsp. baking soda
2 c. shredded carrots

Preheat oven to 350 F.

Combine sugar, applesauce and oil; add eggs one at a time, beating well with each addition. Add combined remaining ingredients except carrots, mixing well until blended.

Stir in carrots. Spread batter into greased and floured 9x13 pan. Bake 45-50 minutes or until wooden pick inserted in center comes out clean. Frost with Cream Cheese Frosting or canned Sour Cream Frosting.
