PRALINES 
2 c. sugar
1 tsp. baking soda
1 c. buttermilk
2 tsp. vanilla
2 c. pecan halves

Combine the first three ingredients in a large saucepan (it boils up) over moderate heat (250 degrees). Cook, stirring occasionally until the soft ball stage (236 degrees). Remove from heat, cool 5 minutes. Add vanilla and nuts. Beat with wooden spoon until slightly thick. Drop by heaping tablespoonsful onto wax paper. Let stand until set.

Makes about 16.
