COUNTRY BEAN SOUP 
2 c. beans (8-10 different kinds)
Ham or ham hock
1 med. onion
3-4 carrots, sliced thin
1/2 c. celery
1 tbsp. parsley
1/4 tsp. thyme
1 pt. tomatoes
Pepper

Wash beans thoroughly. Place in large kettle. Cover with 3 quarts water. Soak at least 4 hours or overnight. Drain, add 2 quarts water and ham. Bring to a boil. Simmer slowly at least 3 hours. Add next 7 ingredients. Simmer 1 hour.
