FRIED RICE 
4 c. rice, cooked & cooled (can be made a day or two ahead of time & refrigerated)
6 slices bacon
1 bunch green onion tops
Soy sauce
Water chestnuts (opt.)
Shrimp (opt.)

Slice bacon in bite size pieces; brown in large skillet. Do not drain bacon grease. Slice onion in bite size pieces and brown in with cooked bacon for just about 1 minute. Pour in rice and break up with a fork, turning heat down to low. Add soy sauce to taste (be careful, it is strong and salty). Stir. Add other ingredients if you wish, heating through. Ready to serve.
